A falaj carries water through stone for kilometres, from a mountain down to a date garden, and has done for two thousand years. Cool water in hot rock is the whole idea here: a gold-bright citrus opening — bergamot, mandarin, a squeeze of neroli — over a mineral coolness that keeps it from turning sugary. It is the freshest thing we make and the most useful in August. Reapply after lunch; that is not a fault, it is what citrus does.
